Eu não sou uma cozinheira sasonal. De alguma forma os gostos culinários da minha família não se querem limitar às regras impostas pelas estações e longe de mim iniciar agora uma ditadura na cozinha!
Comemos o que gostamos, quando gostamos mas ainda assim há uma mão cheia de ingredientes que nos chegam a casa diretamente da horta (da minha sogra) apenas na estação a que pertencem, e a Primavera é uma verdadeira festa de frescura.
Este ano tivemos pela primeira vez funcho de produção “caseira”. O sabor vai muito além do que conhecíamos até há bem pouco. É mais doce, anisado e a frescura não é apenas uma sensação, é mais profunda, quase um sabor por si só. Sei agora que comer funcho fora da época e de “produção massiva” vai ser sempre uma desilusão.
Esta salada simples foi a forma de o provar no seu melhor, cru, natural, sem passar pela transformação do fogo. O salmão foi apenas selado, nem um minuto de cada lado na sertã. Uma camada fina cozinhada e deliciosamente cru por dentro. Millet para dar alguma robustez. Folhas verdes a gosto que podem ser de agrião, alface, canónigos etc. E a saborosa vinagrete de soja e alho que combina todos os ingredientes na perfeição. Este é um retrato de cozinha destes últimos dias cá em casa.

I´m not a seasonal cook. In a way the food tastes of my family don´t want to be limited by the rules of the seasons and far from me to become a dictator of the kitchen! We eat what we like when we like but still there´s a handful of ingredients that make their way into our home directly the kitchen garden (my mother in law´s) only in the right season and Spring is a feast of freshness.
This year we had “homemade” fennel for the first time. The flavor goes beyond what we already knew so far. Is sweeter, aniseed and the freshness is not just a sensation, is deeper, as a flavor on it´s own. I know now that eating fennel out of season and of “massive production” will always be a disappointment.
This simple salad was a way of tasting it in it´s best, raw, natural without passing through the transformation of fire. The salmon was only seared, not even a minute on each side on a frying pan. A thin cooked layer and deliciously raw on the inside. Millet for some robustness. Green leaves to taste, like watercress, lettuce, mache, etc. And the soy and garlic vinaigrette that combines everything to perfection. This is a portrait of my kitchen in these past few days.
I want easy but also really good!
- Ingredientes:
200 g de millet
2 tranches de salmão
Folhas verdes a gosto
1 bolbo de funcho
Sementes de papoila
Para a vinagrete de soja e alho:
2 colheres de sopa de azeite
1 colher de sopa de vinagre de vinho tinto
1 colher de sopa de molho de sopa
1 dente de alho ralado
Sal a gosto
Pimenta preta a gosto - Preparação:
*Leve o millet ao lume com o dobro do seu volume em água e uma pitada de sal. Assim que ferver reduza o lume para o mínimo e tape o tacho, coza por 25 minutos. Tire do lume e deixe descansar com o tacho tapado por 5 minutos. Solte o millet com a ajuda de um garfo. Deixe arrefecer um pouco.
*Entretanto aqueça muito bem uma sertã anti aderente e grelhe as tranches de salmão um minuto se tanto, de cada lado. Quando vir uma linha opaca na base de cada tranche vire e cozinhe do outro lado. Devem ficar cruas no meio. Deixe arrefecer um pouco, corte em pedaços largos e .pressione o topo de cada um em sementes de papoila, ao estilo sushi.
*Numa travessa disponha porções de millet, folhas verdes e por cima os pedaços de salmão. Cubra com fatias muito finas de funcho (eu uso um descascador para laminar o funcho) , salpique com a vinagrete e saboreie!
*Para fazer a vinagrete junte todos os ingredientes e mexa.
- Ingredients:
200 g millet
2 salmon tranches
Green leaves to taste
1 fennel bulb
Poppy seeds to taste
For the vinaigrette:
2 tbsps olive oil
1 tbsp red wine vinegar
1 tabs soy sauce
1 garlic clove, minced
Salt to taste
Black pepper to taste (freshly ground is best) - Preparation:
*Put the millet with the double of it´s volume in water and a pinch of salt in a heavy bottomed pan and take to the heat.
*When it starts to boil, put the lid on and reduce the heat to the lowest, cook for 25 minutes. Remove from the heat, let it rest 5 minutes and fluff with a fork. Let it cool a bit.
*Heat a non stick frying pan and cook the salmon tranches for 1 minute, maybe a bit less, on each sides. When you see an opaque line on the bottom of the tranche turn it over and do the same for the other side. They should be raw on the inside. Let them cool a bit, cut into large pieces and press the top of each on onto some poppy seeds, sushi style.
*In a platter put some portions of millet, green leaves, the salmon pieces on top and then shred the fennel on top of it all. Drizzle with the vinaigrette and enjoy!
*To make the vinaigrette mix all the ingredients together and it´s ready.

Eu bem gostava de ser uma cozinheira mais sazonal do que aquilo que sou, confesso, mas nem sempre me é possivel. O Outono e a Primavera para mim são aquelas estações da verdadeira da loucura, é ver-me a enfardar os produtos tipicos da época que nem doida. Na Primavera é com os espargos que perco a cabeça, parece que só consigo comer espargos e tomates. Nunca comi salmão assim, tenho ideia de que tem de ser super fresco para ser seguro, e como quando compro salmão compro sempre o peixe inteiro, acabo por o arranjar e congelar sem nunca me lembrar de tirar uns lombinhos para fazer selado!!
