Lembro-me de um Sábado há muitos anos atrás, dezassete para ser exata. Era a véspera do batizado do Daniel e a casa estava em alvoroço com a preparação do buffet para os familiares mais próximos, com tudo o que isso implica, como podem imaginar.
As heras e rosas de S. Teresinha, que íam decorar a mesa do bolo e as duas velhas colunas de madeira da sala, já tinham sido apanhadas do jardim. E tal como se fossem as peças de um grande puzzle, as louças, copos, talheres e demais parafernália, foram aos poucos ocupando os espaços em branco na mesa grande, coberta com a toalha de renda e linho bordado, feita pela minha avó especialmente para a ocasião. Os planos feitos muito antes, ganhavam agora forma e cor e enquanto isso, as mulheres da casa iam-se dividindo entre os arranjos e pequenos detalhes…
De tudo o que foi especial nesse dia e que foi muito, guardo a imagem da minha avó e eu, as duas sózinhas na cozinha, cúmplices de volta de um lombo de porco enorme que ela marinava com esmero. Afinal, batizar o primeiro bisneto só acontece uma vez na vida.
A marinada deste lombo não é a mesma que a minha avó fazia, mas anteontem, enquanto a preparava, lembrei-me dela, comigo na cozinha, naquele dia de há dezassete anos atrás. Dos ingredientes que ela usava para enriquecer e amaciar o lombo e do sabor inesquecível que lhe davam. Acho que foi por isso que usei o vinho frisante, os alhos e o alecrim, como era hábito dela. As uvas foram o ingredientes principal, por serem ácidas e frutadas (o porco agradece) e por estarem esquecidas na taça da fruta e a precisarem urgentemente de um resgate.
Depois de uma noite a marinar e de 1 hora no forno, a carne ficou macia e suculenta e embora não fosse o assado que a minha avó fazia tão bem, tenho a certeza de que, se ela estivesse à mesa connosco o aprovaria, sem grande alarido como era do feitio dela, mas aprovaria. Eu sei que sim.

I remember one Saturday many years ago, seventeen to be exact. It was the day before Daniel´s baptism and the house was in a uproar with the preparations of the buffet for the closest family members, with all that that implies, as I´m sure you can imagine.
The ivy and St. Teresinha roses which would decorate the cake table and the two old wood columns of the livingroom, had already been picked from the garden. And just like the pieces of a big puzzle, the dishes, glasses, cutlery and other paraphernalia, were little by litttle filling in the blanks on the large table, covered with the embroidered linen and lace tablecloth, made by my grandmother, specially for the occasion. The plans made long before, started to gain shape and color, and meanwhile, the woman of the house divided themselves between the arrangments and details…
From everything that was special about that day and that was plenty, I kept the image of my grandmother and me, the two of us alone in the kitchen, accomplices around a big piece of pork loin, that she was marinating with great care. After all, baptizing the first great grandson happens only once in a lifetime.
The marinade I made to season this pork loin is not the same my grandmother used to make, but the day before yesterday, while preparing it, I remembered her with me in the kitchen, that day, seventeen years ago. The ingredients she used to enrich and soften the meat and the unforgettable flavor of that pork loin roast.
I think that´s why I used the sparkling wine, garlic and rosemary as was her habit. The grapes were (my) the main ingredient for being accidic and fruity (pork meat appreciates it) and for being forgotten in the fruit bowl and urgently in need of a bailout.
After marinating the whole night and roasting for one hour, the meat was tender and juicy and although it wasn´t the roast my grandmother did so well, I am sure that if she was at the table with us, she would approve it, without great fuss, as it was of her temperament, but she would. I know she would.
A minha avó usava vinho verde branco e por vezes espumante para marinar porco porque a qualidade efervescente dessas bebidas amaciam bastante a carne e o lombo quando não é do cachaço pode ser bastante seco. A carne de porco gosta de fruta e as uvas com a sua acidez (estas não eram muito doces) amaciam a carne e ao mesmo tempo fazem penetrar na mesma o sabor frutado que a enriquece. Os vegetais são uma mistura do que eu mais gosto. A doçura da batata doce. O travo ligeiramente amargo dos cogumelos assados e a suavidade doce das cebolas. Uma delícia!
Ingredientes:
1,5 kg de lombo de porco sem osso
Marinada:
200 g de uvas brancas lavadas
3 dentes de alho picados
2 dl de vinho branco (frisante)
1 colher de sopa de alecrim picado (apenas as folhas)
Sal a gosto
Pimenta preta a gosto
batata doce
cogumelos crimini
cebola
Azeite – 200 ml
Preparação:
*Triture todos os ingredientes para a marinada e cubra a carne com ela, numa taça alta e estreita ou então dentro de um saco plástico. Deixe assim no frigorífico de um dia para o outro.
*Tire a carne do frio. Escorra a marinada e guarde o líquido.
*Pre aqueça o forno a 200º, marca 6 do fogão a gás.
*Prepare as batatas cortando-as em pedaços (com a pele) e a cebola também. Deixe os cogumelos inteiros
*Assim que a carne estiver à temperatura ambiente, leve a assar regando com 200 ml de azeite e salpicando com um pouco mais de sal e pimenta preta. Passados 30 minutos junte os cogumelos inteiros e a cebola e a batata cortadas em pedaços, vire o lombo e regue-o com a marinada. Tempere os vegetais com sal e pimenta preta a gosto e regue com o molho na assadeira.
*Asse por mais 30 a 40 minutos. Não asse demais para não secar.
*Coe os sucos que ficaram na assadeira e leve-os ao lume num tachinho até que reduzam um pouco, vigie para não queimar.
*Tire do forno e espere 10 minutos antes de cortar. Sirva regado com o molho
My grandmother used fizzy white wine and sometimes spumante to marinate pork, because the effervescent quality of these wines makes the meat more tender and juicy and you know how dry pork can be. The tartness of the grapes also helps to soften the meat, making the absortion of the lovely fruity flavor much easier. Pork loves fruit right? So it´s all good things. The vegetables are a mixture of what I love the most. The mellowness of the sweet potatoes. The slightly bitter taste of the roasted mushrooms and the mild sweetness of the onions. Delicious!
Ingredients:
1,5 kg boneless pork loin
Marinade:
200 g white grapes
3 garlic cloves
1 tbs fresh rosemary (just the leaves)
200 ml white fizzy wine
Salt and freshly ground black pepper to taste
Sweet potatoes
Cremini mushrooms
Onion
Olive oil 200 ml
Preparation:
*Blitz all the ingredients for the marinade and cover the meat with it. Use a plastic bag, so the meat stays well covered by the marinade. Leave it in the fridge for the night.
*Remove the pork from the cold and drain the marinade, keeping only the juices.
*Preheat the oven to 200º, 400f, gas mark 6.
*Cut the potatoes into pieces, living the skin on, or not, do as you prefer. Cut and peel the onion but leave the mushrooms whole.
*As soon as the meat is at room temperature put it inside an oven dish, drizzle with olive oil and season with little bit more of salt and black pepper.
*Roast for 30 minutes, then turn the pork loin, pouring the marinade juices on top of it. Add the potaoes cut into pieces, onion and mushrooms to the baking dish, don´t forget to season with salt and black pepper and to coat with a bit of olive oil from the oven dish.
*Roast for another 30 to 40 minutes. Don´t over cook it or it will dry out. Remove from the oven.
*Drain the juices in the oven dish and take to the heat inside a small saucepan, to reduce a bit. Keep a close whatch so it doesn´t burn.
*Let the meat rest for 10 minutes and serve with the gravy.

First I want to say thank you for doing your posts both in Portuguese and English. I often try to read it in Portuguese and can get the idea of what it's about, but I often stop about half way through to skip to English :). Maybe one day I'll get through the whole Portuguese version!
Second, I love this marinade. Most of the pork I've had in Portugal has included wine, but almost never grapes and I can imagine they would compliment it beautifully.
